Homemade chicken soup

Everyone has their own recipe for making homemade soup, this is not a recipe for you, experienced housewives, but for those who are just starting to cook. We love soup in every way possible and from everything, but this one is my favorite.

Ingredients for 8 people

  • turkey or chicken necks
  • bones of one chicken, with some meat on them
  • 2-3 large carrots
  • 2 paskanata with leaves
  • 2 or more potatoes
  • 1 large onion head with shell
  • half of smaller celery
  • a dozen twigs of parsley
  • 3 – 4 cloves garlic
  • 10 – 15 pepper grains
  • 1 leaf of laurel

Wash the meat and cut it into pieces (you can only insert chicken or turkey necks if you want, sometimes I only put both meat at one time).

Clean all the vegetables except the potatoes and wash them well, cut into pieces of size as desired and put them all together in a large pot. I do not like when onions are baked and I put the whole onion head in soup, sometimes two, because in our house everyone likes, except me, cooked onion soup). when it boils, reduce the temperature and cook until you see it boil until the vegetables are cooked in half and then add the peeled and washed potatoes (I add it later so my potatoes don’t boil).

During cooking remove the foam from the meat, which collects on the surface of the liquid.

If you like to make your soup stronger, you should put meat in cold water, and if you like meat better than soup, then put meat in boiling water (I learned this from my mom a long time ago).

When the meat and vegetables are cooked remove from the pan, salt lightly and process the liquid (we usually eat vegetables and meat from the soup with horseradish after soup and that’s enough for lunch) and cook with homemade noodles or dumplings and add to the taste. or any dry spice you use.

You can chop the cooked carrot and put it back in the pan or set aside so that everyone pours as much as they like. Sprinkle with finely chopped fresh parsley.

Pleasant !!!!

You can cook the crust and divide it into small bowls and freeze, if necessary remove from the freezer and just cook with noodles, so you will have soup more often on the table. (This is how I worked until I had time to cook soup all the time) You can also use this sourdough as a base for many other soups and stews or dishes.
