Delicious and Healthy Mushroom Asparagus Quiche

Not only do the mushrooms in this recipe have excellent antioxidant properties, the eggs do too! This dish is easy to make, and incredibly yummy. This one can be enjoyed for breakfast, lunch or dinner: There are no rules here!

Ingredients:

  • 1 tube refrigerated crescent rolls
  • 2 tsp mustard
  • 1 1/2 lbs fresh asparagus
  • 1 medium onion
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup butter
  • 2 eggs, lightly beaten
  • 2 cups shredded mozzarella cheese
  • 1/4 cup minced fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp rubbed sage

Preparation:

  1. Separate the crescent roll dough and place in an ungreased pie pan with the points toward the center, then press and form them into a crust. Spread the crust with mustard.
  2. In a skillet, saute the asparagus, onion, and mushrooms in butter.
  3. Combine the remaining ingredients in a large bowl, then stir in the asparagus mixture. Pour everything into the crust.
  4. Bake at 375 degrees F for 30 minutes, or until done. Let stand before serving.
